We already have a POS system. Do we need to change it?

No. We look at what it does well and what it can export, and we build what's missing around it.

Do we have to count inventory every day?

No. Only the few categories that really move are checked regularly; the rest follows deliveries and sales. A full inventory count is still useful, but it becomes a check rather than a discovery.

Who does the data entry in the kitchen?

Nobody re-keys anything. Supplier invoices are photographed and read, sales come from the POS, and waste is logged in two taps on a phone.

What about extras and variable hours?

Hours are recorded during service and go into payroll prep with premiums and absences, without a patched-together file on the 30th.

How long before it is useful?

A few weeks for a first site. We start with whatever leaks most — usually supplier orders or waste.
